Chocolate chip cookies with oats

I made these cookies last week and the inspiration was something very simple: while I was grabbing a can of chickpeas in the cupboard to make a soup, I saw the jar of oats right next to it, and thought that I hadn’t baked cookies in a very long time. Some more searching through the bags, jars and cans and I found some very good dark chocolate begging to be used.

It is a simple cookie but the bitterness of the chocolate really makes it. There is not a lot of oats in the recipe, but I do feel virtuous eating my cookies and thinking that they have a little bit of goodness in them, from the oats and from the chocolate. These days, isolated and feeling blue, thinking positive is one of the things I try to do the most.

Chocolate chip cookies with oats

1 ½ cups (210g) all purpose flour
½ cup (44g) rolled oats
½ teaspoon baking powder
¼ teaspoon table salt
¼ teaspoon ground cinnamon
2/3 cup (150g) unsalted butter, softened
½ cup (100g) granulated sugar
2/3 cup (116g) light brown sugar, packed
1 large egg, room temperature
2 teaspoons vanilla extract
200g dark chocolate, chopped – I used one with 70% cocoa solids

Preheat oven to 180°C (350°F). Line two large baking sheets with baking paper.
In a medium bowl, whisk together the flour, oats, baking powder, salt and cinnamon. Set aside.
Place the butter, sugars and vanilla in the bowl of an electric mixer and beat until light and creamy – scrape the sides of the bowl occasionally throughout the making of the recipe. Add the egg and beat until well combined. Add the dry ingredients and mix on low speed just until incorporated and a dough forms. Fold through the chocolate pieces.

Roll 2 leveled tablespoons of dough per cookie into balls and place onto prepared sheets, 5cm (2in) apart. Bake for about 14 minutes or until cookies are golden around the edges. Cool on the sheets for 5 minutes, then slide the paper with the cookies onto a wire rack to cool completely.

Makes about 28 cookies

Lemon and raisin oatmeal cookies

Days ago I was thinking (again) of certain ingredients and why they are so hated: aside from coconut and cilantro, I can’t think of anything that divides people as much as raisins do – at least here in Brazil. Every December there are hundreds of memes on Facebook and Twitter of either people saying how much they hate raisins and begging others not to add them to the Christmas dishes or people saying how much they love them, “please add raisins to everything”. It is crazy. :)

I like raisins and have nothing against them, but have to say I prefer them on sweet dishes rather than savory ones. In cookies they work beautifully and here, combined with lemon and oats, make them even more delicious.

Lemon and raisin oatmeal cookies
own recipe

¾ cup (105g) all purpose flour
½ teaspoon baking soda
pinch of salt
1/3 cup (67g) granulated sugar
1/3 cup (58g) light brown sugar, packed
finely grated zest of 2 lemons
½ cup (113g/1 stick) unsalted butter, room temperature
1 large egg, room temperature
½ teaspoon vanilla extract
1 1/3 cups (120g) rolled oats
1 cup (150g) raisins – use golden raisins if you prefer

Preheat the oven to 180°C/350°F. Line two large baking sheets with baking paper.

In a medium bowl, whisk together the flour, baking soda and salt. Set aside.
In the bowl of an electric mixer, rub sugars and lemon zest together with your fingertips until sugar is fragrant. Add the butter and beat until creamy and light – scrape the sides of the bowl occasionally throughout the making of the recipe. Beat in the egg and the vanilla. Add the flour mixture and the oats at once and mix on slow only until a dough forms. Stir in the raisins.

Roll 2 leveled tablespoons of dough per cookie into balls and place onto prepared sheets, 5cm (2in) apart. Bake for 12-14 minutes or until cookies are golden around the edges. Cool on the sheets for 5 minutes, then slide the paper with the cookies onto a wire rack to cool completely.

Apple and rye cake and there is no accounting for taste

To me part of growing up was understanding that there is no accounting for taste: I used to be too emphatic about the things I like – and sometimes still am – but I try not to be too pushy. Until a certain age I used to think that “OMG, the things I like are the best things” – not anymore. At least I try not to be like that (please note that I am not saying I am successful at that). :)

I think I told you ages ago how much I was enjoying Ra Ra Riot and I recently found out there was a new album by the band on Spotify (not sure when it was released, since lately I have been struggling with balancing work + personal projects, not much time left to constantly be updated on certain subjects). So I ended up googling a bit about it and read a text by a guy that hated the album and complained at how much the band sounded like a band from the 80s and also that they seemed possessed by Journey on Call Me Out – I smiled and thought: “well, that is one of the reasons I like the band and Call Me Out is my favorite song of the album”. There is no accounting for taste, indeed. :D

Maybe many of you won’t like the cake I bring today because it is dense, very moist and the rye flour gives it a nutty aftertaste – it you ask me that is exactly why I loved the cake so much. A matter of taste, or just what I felt like at the moment I ate it. If you want a light, fluffy cake, please check my recipe index for inspiration – but if you are in the mood for moist and dense, please go to the grocery store and buy a couple of apples. :)

Apple and rye cake

1/3 cup (75g) unsalted butter
¾ cup (150g) demerara sugar
1/3 cup (80ml) whole milk, room temperature
2 Granny Smith apples, peeled and coarsely grated
1 large egg
½ teaspoons vanilla extract
½ cup (70g) all purpose flour
½ cup (70g) rye flour
½ cup (50g) almond meal
2 ½ teaspoons baking powder
½ teaspoon ground cinnamon
pinch of salt
1 ½ tablespoons rolled oats, to decorate

Preheat the oven to 180°C/350°F. Butter a 5-cup loaf pan, line it with baking paper and butter the paper as well.
Put the butter, sugar and milk into a saucepan and warm until the sugar has dissolved and the butter has melted. Remove from the heat and cool. In another bowl, whisk together the all purpose flour, rye flour, almond meal, baking powder, cinnamon and salt. Add the ingredients from the saucepan, the grated apples, egg, vanilla and mix until smooth.

Transfer to the prepared pan and sprinkle the top of the batter with the oats.
Bake for about 40 minutes until risen and golden and a skewer inserted in the cake comes out clean. Cool in the pan for 25 minutes, then carefully remove and transfer to a wire rack to cool completely. Carefully peel off the paper and serve.

Gingerbread pepper cookies

So you know that I decided to bake for the Christmas series, got carried away and made cookies beside this cake – I have to tell you, without false modesty, that the cookies turned out wonderful! Soft, packed with oats and perfumed with spices, they were a hit with my family and also my coworkers.

I used to take my baked goods to work all the time in the past, but this was the first time I baked for my new coworkers and I did not know if the girls would like the cookies – they loved them and now I want to bake more delicious things for them.
Gingerbread pepper cookies
slightly adapted from the wonderful and beautiful Home Baked: More Than 150 Recipes for Sweet and Savory Goodies

200g all purpose flour
150g rolled oats
1 teaspoon baking powder
¼ teaspoon table salt
generous pinch of freshly ground black pepper
1 teaspoon ground ginger
2 teaspoons ground cinnamon
½ teaspoon ground cloves
½ teaspoon freshly ground nutmeg
150g unsalted butter, room temperature
250g light brown sugar
2 eggs
1 teaspoon vanilla extract
1 teaspoon Cointreau (optional)

Preheat the oven to 180°C/350°F. Line two large baking sheets with baking paper.

In a medium bowl, whisk together the flour, oats, baking powder, salt, pepper and spices. Set aside.
In the bowl of an electric mixer, cream butter and sugar together until light and creamy. Scrape the sides of the bowl occasionally. Beat in the eggs, one at a time, beating well after each addition. Beat in the vanilla and Cointreau. On low speed, mix in the dry ingredients just until combined (do not overmix).

Using a 2-tablespoon cookie scoop drop portions of dough per cookie onto prepared sheets, spacing 5cm (2in) apart. Bake for 12-15 minutes or until cookies are golden around the edges. Cool on sheet over a wire rack for 5 minutes, then slide the paper onto the rack and cool completely.

Cookies can be stored between layers of parchment in airtight containers at room temperature up to 5 days.

Makes about 28

I know no one likes being sick and I am no exception: I’m still not sure if it is a very strong cold or the flu, but I have been in bed for the last two days – I had many plans for the weekend that had to be dropped, unfortunately (like making burgers for lunch again, including the bread), and those got replaced by watching TV in bed between naps (all the medicine I’ve taken makes me quite sleepy).

I picked up Better Call Saul but I’m not sure I’ll go on with it: maybe I was expecting more than I should because of how much I love Breaking Bad, but aside from the pilot I did not enjoy it much (I’ve watched four episodes), and I think it is a shame since Saul was one of my favorite characters (and Bob Odenkirk played him to perfection). Have you watched the show? How did you like it?

Aside from making burgers I planned on baking cookies too this weekend, but that is not going to happen – I’m off to bed again, but I’ll leave you with a tasty and easy cookie recipe that doesn’t even require a mixer. These cookies smell amazing from all the orange zest and ginger and since they are packed with oats I find them great for snacking between meals.

Oat, orange and ginger cookies

¾ cup (130g) light brown sugar, packed
¼ cup (50g) granulated sugar
finely grated zest of 1 large orange
2 cups (180g) rolled oats
¾ cup (105g) all purpose flour
1 teaspoon ground ginger
pinch of salt
1/3 cup + 1 tablespoon (90g) unsalted butter, melted and cooled
1 egg
½ teaspoon vanilla extract

Preheat the oven to 180°C/350°F. Line two large baking sheets with baking paper.
In a large bowl, combine sugars and orange zest and rub them with your fingertips until sugars are fragrant. Stir in oats, flour, ginger and salt. Add butter, egg and vanilla and mix until combined.

Roll 2 leveled tablespoons of dough per cookie into balls and place 5cm (2in) apart onto prepared sheets. Bake for 12 minutes or until golden around the edges. Cool in the sheets over a wire rack for 5 minutes, then slide the paper with the cookies onto the rack and cool completely.

Makes about 30

Chocolate oaties

I’ve loved oats ever since I was a teenager and my favorite way of having the ingredients was sprinkled over mashed banana and a drizzle of honey for a sweet and healthy treat, not to mention how wonderful oats are for those of us in the need of iron or with cholesterol problems.

Besides mashed bananas, cookies made with oats have a special place in my heart (a quick look at the blog recipe list and will see I’m not lying). :D That is why I’m always interested in trying new recipes, and the one I bring you today is perfect for when you’re in a hurry and have no time to wait for the butter to soften up.

If you’re pressed for time as I was, you can bake the cookies one day, keep them in an airtight container and brush them with chocolate later on – I thought of sandwiching the cookies with some ganache, but did not want to go out just to buy cream.

I’ll leave you with that suggestion. ;)

Chocolate oaties
slightly adapted from Good Housekeeping magazine

150g all purpose flour
¾ teaspoon baking powder
½ teaspoon baking soda
pinch of salt
125g light brown sugar
125g rolled oats
125g unsalted butter
1 tablespoon runny honey
70g dark chocolate, melted

Preheat the oven to 180°C/350°F. Line two large baking sheets with baking paper.
In a large bowl, mix together the flour, baking powder, baking soda, salt, sugar and oats. In a small saucepan, melt together the butter and honey over medium heat. Pour over the dry ingredients and stir until combined.
Roll 1 leveled tablespoon of dough per cookie into balls and place 5cm (2in) apart onto prepared sheets. Bake for about 12 minutes or until golden around the edges and slightly firm. Slide the paper with the cookies onto a rack and cool completely.
Using a pastry brush, paint half of each biscuit with chocolate. Transfer to a rack and set aside until set.

Macadamia and white chocolate chip cookies (with a touch of iron)

I'm not one who repeats sweet recipes often - aside from household favorites such as Alice Medrich's cocoa brownies and Nigel Slater's lemon and thyme cake, for instance, I get thrilled to try new things, or at least pimped up versions of baked goods and desserts I once tried and loved.

I hadn't baked white chocolate macadamia cookies in ages, and was pretty happy with my go-to recipe, but when I read Alice Medrich's version with pulverized rolled oats in the dough I had to give it a try: after I found out I was anaemic I tried to increase the amounts of iron rich foods on my daily routine, and oats were a big part of it - in this case it was a win/win situation, since the cookies turned out delicious, too. :)

Macadamia and white chocolate chip cookies
from the delicious Chewy Gooey Crispy Crunchy Melt-in-Your-Mouth Cookies by Alice Medrich

75g rolled oats
100g all purpose flour
½ teaspoon baking soda
1/8 teaspoon salt
½ cup (1 stick/113g) unsalted butter, melted and still warm
70g granulated sugar
70g light brown sugar
½ teaspoon pure vanilla extract
1 large egg
135g roasted salted macadamia nuts, coarsely chopped
170g white chocolate chips or chunks

Pulverize the oats in a food processor or blender until fine. Add the flour, baking soda and salt. Pulse to combine and set aside.
In a large bowl, combine the melted butter with the sugars and vanilla. Whisk in the egg. Stir in the flour mixture just until all of the dry ingredients are moistened. Let the mixture cool for a few minutes if it is still warm. Stir in the nuts and chocolate chips, cover and refrigerate for at least 2 hours and preferably overnight.
Preheat the oven to 165°C/325°F – you will bake the sheets in the center of the oven, one at a time.
Remove the dough from the refrigerator to soften. Line two large baking sheets with baking paper.
Scoop 1 rounded tablespoon of dough per cookie and place 5cm (2in) apart onto prepared sheets. Bake until cookies are deep golden brown, 13-15 minutes. Cool on the sheets for 5 minutes, then slide the paper onto a wire rack and cool completely.

Makes about 35 cookies

Banana crumble

I was watching “Law & Order” the other day and felt like eating something sweet (like that’s something unusual). :) But the episode was really interesting – no Linus, which is bad, but Benjamin, which is good – and I wanted something fast to get back to the couch as soon as possible. The result was this crumble, ridiculously simple and oh, so delicious – and that smells and tastes like banana tart without all the work.

inspired by the always wonderful Modern Classics 2

½ cup (70g) all purpose flour
pinch of salt
1 ½ tablespoons superfine sugar
1 ½ tablespoons demerara sugar
pinch of ground cinnamon, or to taste
¼ cup (28g) rolled oats
50g unsalted butter, cold and chopped
2 bananas

Preheat the oven to 180°C/350°F. Slice the bananas and divide them equally among two lightly buttered 1 cup (240ml) capacity ovenproof bowls. Set aside.
Place flour, salt, sugars, cinnamon and oats in a medium bowl and mix to combine. Add the butter and, using your fingertips, rub the ingredients together until mixture resembles breadcrumbs. Sprinkle over the bananas mixture and bake for 30 minutes or until golden.
Serve with heavy cream or vanilla ice cream.

I’m someone who obsesses with certain things from time to time – directors, actors, music, you name it. And food, of course. I obsessed with Ralph Fiennes so badly after “Schindler’s List” that I had to watch each and every film with him – and that led me to Kathryn Bigelow’s “Strange Days” (which is far better than “The Hurt Locker”, imho). Did I mention I was about 17 back then? Well. ;)

It might seem that I’m on a cake kick right now, but I’ve been really thinking about bars lately – and these are the ones to blame. They were so irresistible – and easy to make, despite the layers – that a search for great bars has begun, and the granola ones you see on the picture can certainly be part of the bar hall of fame: they were so good I almost did not share them. :)

Back to school raspberry granola bars
from The Craft of Baking

¾ cup (168g/1 ½ sticks) unsalted butter, melted and cooled to room temperature
1 cup (110g) pecans, roughly chopped
1 ½ cups (210g) all purpose flour
1 ¼ cups (143g) old fashioned rolled oats – I made a mistake and used 1 ½ cups (172g)
1/3 cup (67g) granulated sugar
1/3 cup (58g) light brown sugar, packed
½ teaspoon salt
½ teaspoon baking soda
1 cup raspberry preserves

Preheat the oven to 180°C/350°F. Butter a 20cm (8in) square baking pan, line it with foil, leaving an overhang on two opposite sides and butter the foil as well.
Place the pecans on a baking sheet and bake until lightly golden and fragrant, about 5 minutes. Cool the sheet completely on a wire rack.
In a large bowl, combine flour, oats, granulated sugar, brown sugar, salt, baking soda and the cooled pecans. Pour in the melted butter and mix until well combined. Transfer about 2/3 of the mixture to the prepared pan. Press the dough evenly into the pan, forming a firmly packed layer. Using a spatula spread the preserves over the base. Evenly sprinkle the remaining dough over the preserves. Bake, rotating the pan halfway through, until the top is golden brown and fragrant, about 40 minutes. Transfer the pan to a wire rack and cool completely. With the aid of the foil handles, carefully remove from the pan and cut into squares.
The bars can be kept in an airtight container at room temperature for up to 1 week.

I swear I’m not trying to get a job as an oatmeal poster girl, and I’d already decided on which oatmeal cookies were my favorite, but tell me: would you resist making a recipe with such great reputation? :)

These cookies are so delicious I regretted halving the recipe. Mr. Clinton’s taste in cookies is far superior to his taste in... Never mind. :D

Fat raisins:
1 ½ cups (232g) golden raisins
¾ cup (180ml) dry white wine
3 tablespoons fresh orange juice
1 ½ tablespoons dark rum
3 tablespoons caster (superfine) sugar

Cookies:
1 ½ cups (210g) all purpose flour
1 teaspoon baking soda
1 ¾ sticks (198g) unsalted butter, room temperature
1 cup (200g) granulated sugar
1 cup (175g) light brown sugar, packed
1 ½ teaspoons freshly grated nutmeg
¾ teaspoon ground cinnamon
2 large eggs, room temperature
3 cups (354g) rolled oats
1 recipe (1 ½ cups) fat raisins

Start by preparing the fat raisins: combine the raisins, wine, orange juice, rum and sugar in a small heavy saucepan; bring just to a boil over medium heat, stirring all the while. Lower the heat so that the liquid is at a bare simmer and poach for 20 minutes.
Remove from the heat, cover the pan with plastic wrap and allow to cool completely. If not using right away, transfer to an airtight container and store in the refrigerator for up to 2 weeks.

Now, the cookies: preheat the oven to 180°C/350°F; line two large baking sheets with baking paper.
Sift together the flour and baking soda and set aside.
In the bowl of a stand mixer fitted with the paddle attachment, or in a large bowl with a hand mixer, cream the butter on high speed until lemony yellow, about 2 minutes. Scrape down the sides of the bowl and the paddle/beaters. Add the granulated sugar, brown sugar, nutmeg and cinnamon. Beat until creamy and scrape the sides of the bowl.
Add the eggs, one at a time, scraping the bowl after each addition. Beat on low speed for 15-30 seconds or until the eggs are incorporated. On low speed, add the sifted ingredients, beating until they’re absorbed. Mix in the oats and raisins.
Place 1 leveled tablespoon of dough per cookie onto prepared sheets, 5cm (2in) apart. Bake for 10 minutes, rotate the baking sheet, then bake for another 5-8 minutes or until nicely browned. Carefully slice the baking paper off the sheet and directly onto your work surface. Cool completely.
Cookies will keep for up to 3 days in an airtight container at room temperature.

Makes 80 small cookies (about 5cm/2in each) – I halved the recipe above and regret it (the cookies were too good!)

Apple and passion fruit crumble

Are you tired of my apple recipes yet? :)

I know I’ve been using apples like crazy lately, and must confess that I still intend to make a couple of recipes with them before the end of their season.
Let me tell you one delicious thing I found out the other day: I never knew apples and passion fruit were so good together. Luckily, Bill did. :)

Apple and passion fruit crumble / Crumble de maçã e maracujá

Apple and passion fruit crumble

6 Granny Smith apples, peeled, cored and thinly sliced – I used Gala
½ cup (100g) caster sugar
pulp from 8 passion fruit*

Topping:
1 cup (115g) rolled oats
2/3 cup + 1 tablespoon (129g) brown sugar, packed
1/3 cup (46g) all purpose flour
100g unsalted butter, softened
vanilla ice cream or heavy cream, to serve – yogurt goes really well, too

Preheat the oven to 180°C/350°F; butter a 2-liter baking dish. Mix together the apples, sugar and passion fruit pulp and put in the dish.

Using your fingertips, rub together the oats, brown sugar, flour and butter to make a crumbly topping. Sprinkle over the fruit and bake for 25-30 minutes or until golden.
Serve with ice cream, cream or yogurt.

* the passion fruit I used were huge (there’s a photo here), so 4 were enough

Blueberry and pistachio toasted muesli

After parading five hundred tons of sweets around here I thought it was time for something a little bit healthier – but it had to be good, because food that tastes like cardboard is definitely not allowed on this blog. :)

This muesli is delicious and easy to make – even if you and your oven are not very close friends. :)

Blueberry and pistachio toasted muesli

60g unsalted butter
⅓ cup (80ml) honey
2 ¼ cup (258g) rolled oats
½ cup (70g) slivered almonds
¾ cup (75g) sweetened shredded coconut
1 cup (170g) dried blueberries
½ cup pumpkin seed kernels (pepitas)*
¾ cup (105g) chopped pistachio kernels
milk, to serve
plain yogurt, to serve

Preheat the oven to 160°C/320°F. Place the butter and honey in a small saucepan over low heat and stir until the butter is melted.
Place the oats, almonds and coconut in a large bowl, pour over the butter mixture and toss well to combine. Spread evenly over the base of a baking dish and bake for 10 minutes. Stir and bake for a further 5−10 minutes or until crisp and golden. Allow to cool and stir through the blueberries, pumpkin seeds and pistachios. Serve with the milk and yoghurt.
The muesli can be stored in an airtight container for up to 1 week.

*I used sunflower seeds instead but did not like the result

Serves 6-8.
